Spinach Pancakes

This crafty way of incorporating spinach into your diet is naturally sweet, gluten-free, and ready to eat in 5 minutes.

Makes: 3-4 mini pancakes

What you'll need:

1/2 cup spinach

1 banana

1/3 cup oats

1 egg

Dash of cinnamon

 

 
 Preparation:

1. Blend ingredients together 

2. Add 2-3 Tbps of milk to thin (optional)

3. Heat greased skillet or griddle over medium heat

4. Pour approximately 2 Tbsp batter into pan for each pancake

5. Cook for 2 - 5 minutes each side
