They recently delivered a box of their ugliest produce so we could cook a meal using produce that would typically go to waste for looking a little funny.

Quinoa Salad
1 cup cooked quinoa
¼ cup diced cucumber
2 Tbsp chopped almonds
2 Tbsp olive oil
Juice of half lemon
Salt, to taste
Toss ingredients together!
Bok Choy Salad
2-3 bok choy leaves (green only)
¼ cup chopped apple
2-3 orange segments
2 Tbsp orange juice
1 tsp honey
Salt, to taste
- Slice bok choy very thin.
- Mix orange juice, honey, and salt. Toss with bok choy.
- Add chopped apple and orange segments.
Potato Chips
1 potato
Oil (olive, coconut) or cooking spray
Salt, to taste
- Preheat oven to 400°.
- Line baking pan with parchment paper.
- Slice potato thinly using mandoline.
- Lightly & evenly spray or brush potato slices with oil.
- Arrange potato slices in single layer on baking sheet.
- Bake 12-15 minutes until crisp.
- Season with salt.
