INGREDIENTS:
½ cup quinoa
1 cup apple cider
½ tsp chili powder
½ tsp salt
1 sweet potato
¼ apple, chopped
¼ cup pomegranate seeds
Juce from ½ lime
3 mini taco shells
DIRECTIONS:
1. Rinse and drain quinoa. Add quinoa, apple cider, chili powder, and salt to a pot and bring to a boil. Reduce heat, cover, and cook until cider is absorbed, about 15-20 minutes.
2. While quinoa is cooking, peel and chop sweet potato. Heat oil in pan and add sweet potato. for 10-15 minutes, stirring occasionally.
3. Toss cooked quinoa with sweet potato, chopped apple, pomegranate seeds, and lime juice.
4. Fill taco shells and enjoy!
