Living with multiple food allergies can make enjoying food with others difficult. My biggest tip is preparing my own allergen safe foods and bringing them with me. My PlanetBox lunchboxes really come in handy in these situations! This is one of my go-to brunch options lately- they are so delicious and free of gluten, dairy and eggs!
WAFFLES:
1 cup gluten-free flour
1 cup almond flour
1/4 cup coconut sugar
1 tbsp psyllium husk or flaxseed
1 tsp baking powder
Dash of salt
1 tsp vanilla
1 1/2 cups dairy-free milk of your choice (I like to use half almond and half hazelnut)
CINNAMON SUGAR TOPPING:
2 tbsp vegan butter, melted
1/2 cup coconut sugar
1 tbsp cinnamon
DIRECTIONS:
Combine waffle dry ingredients in a large bowl. Add in wet ingredients. Pour batter into waffle maker (I prefer using a mini waffle maker for these). Slice waffles into strips. Combine cinnamon sugar topping ingredients in a medium-sized bowl. Dip waffle strips into mixture and place in a pan over low-medium heat for 2 minutes per side. Pair with your favorite dips and fruit and enjoy!
