Butternut Squash Sammie

 Loaded with antioxidants and vitamin C, this vegetarian sandwich has a low carbon footprint and a strong imprint on your health. It's a win-win! Try squeezing some lemon juice in the yogurt for an added boost! 

 

INGREDIENTS:

 

4 butternut squash slices, 1/2 inch thick

1 Tablespoon olive oil

dash salt

2 Tablespoons Greek yogurt

2 slices whole grain bread

1/4 cup sprouts

1  cooked or pickled beat, sliced thin

 

DIRECTIONS:

 

1. Preheat oven to 400°.

2. Brush squash with olive oil and sprinkle with salt.

3. Bake for 20-25 minutes until tender. Let cool. 

4. Assemble sandwich with remaining ingredients.
